Ingredients:
For the Tofu Scramble:
- 14 oz (400g) firm tofu, drained and crumbled
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon turmeric (for color)
- 1/2 teaspoon ground cumin
- 1/4 teaspoon paprika
- Salt and pepper to taste
For Sautéed Mushrooms, Spinach, and Cherry Tomatoes:
- 1 cup sliced mushrooms (such as button or cremini)
- 2 cups fresh spinach leaves
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- Salt and pepper to taste
Directions:
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and sauté for about 2-3 minutes until it becomes translucent.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the crumbled tofu to the skillet, along with the turmeric, ground cumin, paprika, salt, and pepper.
- Cook the tofu mixture for about 5-7 minutes, stirring occasionally, until the tofu is heated through and has absorbed the flavors. Adjust seasoning as needed.
- In another skillet, heat olive oil over medium heat.
- Add the sliced mushrooms and sauté for about 4-5 minutes until they release their moisture and turn golden brown.
- Add the fresh spinach leaves to the skillet and sauté for an additional 2-3 minutes until wilted.
- Toss in the halved cherry tomatoes and cook for another 1-2 minutes until they are slightly softened.
