Tofu Scramble with Sauteed Mushrooms, Spinach and Tomatoes

Ingredients:

For the Tofu Scramble:

  • 14 oz (400g) firm tofu, drained and crumbled
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon turmeric (for color)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • Salt and pepper to taste

For Sautéed Mushrooms, Spinach, and Cherry Tomatoes:

  • 1 cup sliced mushrooms (such as button or cremini)
  • 2 cups fresh spinach leaves
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions:

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chopped onion and sauté for about 2-3 minutes until it becomes translucent.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the crumbled tofu to the skillet, along with the turmeric, ground cumin, paprika, salt, and pepper.
  5. Cook the tofu mixture for about 5-7 minutes, stirring occasionally, until the tofu is heated through and has absorbed the flavors. Adjust seasoning as needed.
  6. In another skillet, heat olive oil over medium heat.
  7. Add the sliced mushrooms and sauté for about 4-5 minutes until they release their moisture and turn golden brown.
  8. Add the fresh spinach leaves to the skillet and sauté for an additional 2-3 minutes until wilted.
  9. Toss in the halved cherry tomatoes and cook for another 1-2 minutes until they are slightly softened.
  10. Season the sautéed vegetables with salt and pepper to taste.
  11. Combine the cooked tofu scramble with the sautéed mushrooms, spinach, and cherry tomatoes. Gently mix to incorporate the flavors.
