Baked Gingerbread Oatmeal Squares

These Baked Gingerbread Oatmeal Squares bring the warm, comforting flavors of gingerbread into a simple breakfast or snack. With ginger, cinnamon, cloves, nutmeg, and a touch of molasses, every bite has that familiar holiday flavor. The texture is soft and satisfying, with old-fashioned oats and chopped walnuts adding a little heartiness and crunch.
Unlike traditional gingerbread bars made with refined flour and generous amounts of sugar, these oatmeal squares use whole-grain oats, plain Greek yogurt, and unsweetened applesauce. Just two tablespoons of molasses provide the signature gingerbread taste, while baking stevia supplies additional sweetness without needing more sugar.
They’re easy to prepare in one bowl and bake in an 8-inch square pan. Enjoy one as an afternoon snack, or pair two squares with a cup of coffee or tea for a more substantial breakfast. They’re also convenient to make ahead for busy mornings during the holiday season.
Ingredients
Yield: 9 squares · Baking dish: 8-inch square
- 2 cups old-fashioned rolled oats
- 1 teaspoon baking powder
- 2 teaspoons ground ginger
- 1½ teaspoons ground cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- 2 large eggs
- 1 cup 2% milk
- 1 cup plain nonfat Greek yogurt
- ½ cup unsweetened applesauce
- 2 tablespoons molasses
- Baking stevia equivalent to approximately ¼ cup sugar, or to taste
- 1 teaspoon vanilla extract
- ¼ cup chopped walnuts or pecans
Instructions
- Preheat the oven. Heat the oven to 350°F. Lightly grease an 8-inch square baking dish or line it with parchment paper, leaving a little overhang for easy removal.
- Combine the dry ingredients. In a large mixing bowl, stir together the old-fashioned oats, baking powder, ground ginger, cinnamon, cloves, nutmeg, and salt until evenly combined.
- Add the wet ingredients. Add the eggs, milk, Greek yogurt, unsweetened applesauce, molasses, baking stevia, and vanilla extract to the bowl.
- Mix the batter. Stir until all ingredients are well combined and the oats are evenly moistened. Fold in the chopped walnuts or pecans.
- Fill the baking dish. Pour the mixture into the prepared pan and spread it evenly, making sure the oats and nuts are distributed throughout.
- Bake until set. Bake for 25–30 minutes, until the center is set and the edges are lightly golden. The squares should be firm enough to hold together while remaining soft and moist.
- Cool and slice. Allow the baked oatmeal to cool in the pan for at least 15 minutes. Cut into nine equal squares and serve warm or at room temperature.
Estimated Nutrition Per Serving
Estimated nutrition per square, based on nine servings and a baking stevia product without added sugar. Actual values depend on ingredient brands and the sweetener used. The molasses contributes approximately 2–3 grams of added sugar per square. Two squares provide approximately 14–16 grams of protein and 4–6 grams of fiber.
Why This Recipe Is a Healthy Choice
Old-fashioned oats are a whole grain that provides dietary fiber, including beta-glucan, a type of soluble fiber associated with healthy cholesterol levels. Oats also contribute complex carbohydrates that help make these squares a satisfying breakfast or snack. Using oats instead of refined flour adds nutritional value while creating a hearty, tender texture.
Greek yogurt, eggs, and milk contribute protein, an important nutrient for maintaining muscle mass as we age. The Greek yogurt and applesauce also help keep the squares moist without requiring a large amount of butter or oil. Walnuts add unsaturated fats and additional nutrients, including plant-based omega-3 fatty acids.
Ginger, cinnamon, cloves, and nutmeg provide the familiar flavor of gingerbread, allowing a relatively small amount of molasses to go a long way. Molasses adds the rich, distinctive taste that makes these squares feel like a holiday treat. This recipe is a practical example of enjoying comforting seasonal flavors while choosing ingredients that support everyday healthy eating.
Mary’s Opinion – Taste Test
These Gingerbread Oatmeal Squares are a special treat! They have all those wonderful Christmas flavors from the ginger, cinnamon, cloves, and nutmeg, and they’re really tasty.
What surprised me most was the texture. They’re soft and cake-like, which I wasn’t sure we could achieve without using flour. And I love that I’m getting some protein while enjoying something that tastes like cake! They have a nice sweetness, although I was expecting just a little more. I think I’ll add a bit more stevia the next time I make them.
Despite the number of ingredients, this recipe was surprisingly easy to prepare. I already had all the spices in my cabinet, so it was really just a matter of putting everything in a bowl, stirring, and baking. Very simple!
In about 30 minutes, I had a delicious, homemade treat filled with all those lovely Christmas flavors. These are definitely a nice way to enjoy a little holiday sweetness!
Cooking Notes
Choosing molasses: Regular unsulfured molasses works well for a classic gingerbread flavor. Blackstrap molasses has a much stronger, more bitter taste and may not provide the same result. Only two tablespoons are needed for the entire batch.
Choosing a baking stevia: Sweetener products vary in concentration, so follow the package directions for the amount equivalent to approximately ¼ cup of sugar. A stevia blend containing sugar may increase the added sugar in the finished recipe.
Walnuts or pecans: Either nut works well. Walnuts provide a slightly earthy flavor, while pecans add a more buttery taste. Chop them into small pieces so they distribute evenly through the squares.
Expect a soft texture: These squares are baked oatmeal, not firm, crunchy granola bars. Greek yogurt, milk, and applesauce keep them moist. Allowing the pan to cool before slicing helps the squares hold together.
For a more substantial breakfast: Two squares provide approximately 15 grams of protein and 5 grams of fiber, based on the estimated nutrition. Serve with additional plain Greek yogurt or fruit if desired.
Make-ahead and storage: Allow the squares to cool, then store them in an airtight container in the refrigerator for up to 3–4 days. Warm individual portions briefly in the microwave before serving.
Freezer-friendly: Wrap individual squares and freeze for up to 2–3 months for best quality. Thaw in the refrigerator and warm before eating.
