If you’ve never cooked with tofu before, you’re not alone. Many women over 50 are curious about adding more plant-based meals to their routine but aren’t quite sure where to start. Tofu is one of those ingredients that can seem intimidating at first, but once you learn how to prepare it, it becomes an incredibly versatile, affordable, and nutritious addition to your kitchen.
You don’t have to eat a completely plant-based diet to benefit from plant-based foods. Adding more beans, lentils, vegetables, whole grains, nuts, seeds, and foods like tofu to your meals is a simple way to increase variety while supporting your overall health. Tofu is made from soybeans and provides high-quality plant protein, making it a satisfying option that pairs beautifully with vegetables, herbs, and spices. Because it naturally absorbs the flavors around it, tofu becomes whatever you season it to be.
This tofu scramble combines savory mushrooms, fresh spinach, juicy tomatoes, and warm spices to create a colorful breakfast that’s both nourishing and satisfying. Whether you’re looking for a meatless breakfast, trying to include more plant-forward meals in your week, or simply experimenting with new ingredients, this recipe is an easy place to begin.
Healthy eating isn’t about following one specific style of eating. It’s about discovering nutritious foods you enjoy and building meals that leave you feeling energized, satisfied, and excited to come back for another bite.
