One of my favorite ways to make healthy eating feel abundant instead of restrictive is to add more vegetables to meals you already enjoy. That’s especially helpful for women over 50 who want to lose weight without constantly feeling like they’re eating less. A colorful stir-fry is one of the easiest ways to do it—you get a generous plate of food, plenty of flavor, and a variety of nutrients all in one meal.

We teach women to think about what they can add to their plate, not just what they need to take away. This lentil and vegetable stir-fry is a perfect example. Lentils provide plant-based protein and an impressive amount of fiber, quinoa contributes additional protein and a satisfying whole-food carbohydrate, and vegetables like broccoli, peppers, carrots, and snap peas add volume, fiber, color, and crunch.

That combination matters because a satisfying meal isn’t about calories alone. Protein, fiber, food volume, and flavor all play a role in helping you finish a meal feeling like you’ve actually eaten. And when healthy meals leave you satisfied, it becomes much easier to make those choices consistently instead of relying on willpower to get through the day.

Garlic, fresh ginger, and soy sauce bring plenty of savory flavor to this simple stir-fry, while the vegetables can easily be changed depending on what you have in your refrigerator. It’s an easy, flexible way to experiment with more plant-based meals—and a delicious reminder that healthy eating can mean putting more good food on your plate, not continually taking food away.

Ingredients:

For the Lentil and Vegetable Stir-Fry:

  • 1 cup dried green or brown lentils, rinsed and drained
  • 4 cups mixed vegetables (such as bell peppers, broccoli, carrots, snap peas), sliced
  • 2 tablespoons vegetable oil (e.g., canola or olive oil)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • Salt and pepper to taste
  • Soy sauce or tamari, for seasoning

For the Quinoa:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • Salt to taste

Directions:

  1. In a medium saucepan, combine the rinsed quinoa and water or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff the quinoa with a fork and season with salt to taste.
  2. In a separate pot, bring about 3 cups of water to a boil. Add the rinsed lentils and simmer for about 20-25 minutes, or until the lentils are tender but still hold their shape. Drain any excess water.
  3. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and minced ginger, and sauté for about 30 seconds until fragrant.
  4. Add the sliced mixed vegetables to the skillet and stir-fry for 3-4 minutes until they’re slightly tender but still crisp.
  5. Add the cooked lentils to the skillet. Toss everything together and sauté for an additional 2-3 minutes to combine the flavors.
  6. Season the stir-fry with salt, pepper, and a splash of soy sauce or tamari for extra flavor.
  7. Divide the cooked quinoa among serving plates. Top with the lentil and vegetable stir-fry.
