The more flavorful your meals are, the easier it is to enjoy eating well and the less likely you are to feel like you’re “on a diet.” That’s why I always encourage adding herbs, spices, and homemade dressings that bring meals to life.

This homemade pesto dressing comes together in just a few minutes using a food processor or blender and is easy to keep on hand for the week ahead. It’s a simple way to make healthy meals more enjoyable while building habits that feel satisfying, sustainable, and realistic for everyday life.

Ingredients:

  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts or walnuts
  • 1/4 cup grated Parmesan cheese (optional for a non-vegan version)
  • 2 cloves garlic, peeled
  • 1/2 cup extra-virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Directions:

  1. In a food processor or blender, combine the fresh basil leaves, pine nuts or walnuts, grated Parmesan cheese (if using), and peeled garlic cloves.
  2. Pulse the ingredients a few times until they are roughly chopped and well combined.
  3. With the food processor or blender running, slowly drizzle in the extra-virgin olive oil until the mixture becomes smooth and well blended.
  4. Add the lemon juice and season with salt and pepper to taste. Blend again until the dressing reaches your desired consistency.
  5. Transfer the pesto dressing to a jar or airtight container.
