Ingredients:

For the Salad:

  • 4 cups mixed greens (such as lettuce, spinach, arugula)
  • 1 cup canned chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup black or kalamata olives, pitted and sliced

For the Lemon-Tahini Dressing:

  • 2 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons water
  • 1 clove garlic, minced
  • Salt and pepper to taste

Directions:

  1. In a small bowl, whisk together the tahini, fresh lemon juice, water, minced garlic, salt, and pepper until smooth. If needed, adjust the consistency by adding more water.
  2. In a large salad bowl, arrange the mixed greens as the base.
  3. Scatter the canned chickpeas, diced cucumber, thinly sliced red onion, halved cherry tomatoes, and sliced olives over the mixed greens.
  4. Drizzle the prepared lemon-tahini dressing over the salad.
  5. Gently toss the salad to combine all the ingredients and coat them with the dressing.
  6. Divide the chickpea salad among serving plates or bowls.
