Ingredients:

- 1 medium head cauliflower, florets separated
- 1 egg
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon dried oregano

- 1/2 cup tomato sauce (store-bought or homemade)
- 1 cup shredded mozzarella cheese

Directions:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the cauliflower florets in a food processor and pulse until they resemble rice-like grains.
- Transfer the cauliflower rice to a microwave-safe bowl and microwave for 4-5 minutes. Let it cool slightly.
- Using a clean kitchen towel or cheesecloth, squeeze out as much moisture as possible from the cauliflower.
