One of the biggest lessons I teach women over 50 is that losing weight doesn’t have to mean constantly trying to eat less food. In fact, if your meals leave you hungry an hour or two later, eating smaller portions may make healthy eating harder to maintain. That’s one reason soup can be such a useful addition to a healthy eating routine. This hearty lentil soup combines lentils with carrots, celery, tomatoes, onion, garlic, herbs, and plenty of broth to create a generous, comforting bowl of food. Lentils provide an especially nice combination of plant protein and fiber, while the vegetables and broth add additional nutrients and volume without requiring a complicated recipe.

Fiber becomes particularly important as we get older, yet many women aren’t getting enough of it. Beyond supporting digestive health, fiber helps slow digestion and contributes to fullness, which can make it easier to manage hunger between meals. Lentils, vegetables, beans, whole grains, fruits, nuts, and seeds are all practical ways to gradually bring more fiber into your everyday meals.

I also love recipes like this because they prove healthy food doesn’t have to feel like “diet food.” This is warm, flavorful comfort food that happens to be filled with ingredients that nourish your body. Make a pot for dinner, portion the leftovers for lunches, or freeze individual servings for busy days. Having satisfying food ready before you’re hungry is one of the simplest ways to make the healthier choice the easier choice.

If you want to turn this soup into a more protein-focused meal, you can do that too. Add some edamame or pair it with another plant-based protein, or add chicken or turkey if you aren’t following a plant-based diet. Healthy eating isn’t about making every meal fit one rigid formula—it’s about understanding what your body needs and learning how to build meals that meet those needs.

Ingredients:

  • 1 cup dried green or brown lentils, rinsed and drained
  • 1 onion, chopped
  • 3 carrots, peeled and diced
  • 3 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth or water
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tablespoons olive oil
  • Fresh lemon juice (optional, for serving)
  • Chopped fresh parsley or cilantro (for garnish)

Directions:

  1. Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes until the vegetables start to soften.
  2. Add Garlic and Spices: Add the minced garlic, ground cumin, ground coriander, and ground turmeric to the pot. Sauté for an additional 1-2 minutes until the spices are fragrant.
  3. Add Lentils and Liquid: Add the rinsed lentils, diced tomatoes (with their juices), and vegetable broth or water to the pot. Stir well to combine.
  4. Add Bay Leaf and Simmer: Drop in the bay leaf. Bring the soup to a boil, then reduce the heat to low. Cover and let the soup simmer for about 25-30 minutes or until the lentils are tender.
  5. Season and Adjust: Once the lentils are cooked, season the soup with salt and pepper to taste. Remove the bay leaf and discard.
  6. Blend (Optional): For a creamier consistency, you can use an immersion blender to partially blend the soup. This step is optional; you can leave the soup as is if you prefer a chunkier texture.
  7. Serve: Ladle the hot lentil soup into bowls. Squeeze a bit of fresh lemon juice over each serving if desired, and sprinkle with chopped fresh parsley or cilantro for a burst of flavor and color.
