Ingredients:
- 1 cup dried green or brown lentils, rinsed and drained
- 1 onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 2 cups mixed vegetables (such as potatoes, sweet potatoes, green beans, peas), chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley or cilantro, chopped (for garnish)
Directions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5 minutes until the vegetables start to soften.
- Add the minced garlic, dried thyme, and dried rosemary to the pot. Sauté for an additional 1-2 minutes until fragrant.
